Chef's Special with Adam Fletcher, City of Oxford College
My name is Adam Fletcher, I am a student in hospitality and catering at City of Oxford College. After a passion for cooking at home I wanted to further my skills and create a name for myself.
As part of my course I am encouraged to get a part-time job at a local bar or restaurant and I work at The Como Lounge in Witney, recently getting the job of chef de partie.
My cooking style is home style and my signature dish is chocolate cream Bakewell tart.
My guilty pleasure when I’m too tired to cook is a cheese and onion sandwich.
Favourite places to eat and drink around Oxfordshire include The Swan in Swinbrook, between Minster Lovell and Burford, which is a great place for a drink because it’s quiet and has a large beer garden.
The strangest food I’ve ever eaten would probably be a spider – but I was about two at the time!
My favourite kind of cuisine is Italian, or any dessert.
My cooking is inspired by family and friends: they try my dishes and will give me honest feedback.
INGREDIENTS
* 130 g caster sugar
* 700 ml double cream
* 2 lemons (zest and juice)
Bring the cream and sugar to the boil, take off heat and add the lemon zest and juice.
Mix well, portion up and chill.
Serve cold with raspberries and shortbread.
