MATTHEW Cockman cooked up a storm at Wallingford Local Producer’s Market on Saturday as he promoted local food and suppliers.

The chef at the town’s Partridge Inn rustled up a frittata made from local ingredients, including organic vegetables from Ash Trees Farm at Benson.

He said: “I wanted to promote everything that goes with local food and look at seasonal vegetables.

“I cut up some nice onions, peppers and courgettes and some cheese and eggs and cooked them in the oven for a bit.

“Over the last few weeks when the weather was so warm the courgettes were growing almost overnight and we have been doing everything we can to use them.

“We have so much great local food, why would you spend money on things from another country when you can get so much great produce right here?”

Mr Cockman, 26, also showed off his knife skills and gave tips to visitors.

He said: “Some people who were there wanted to purchase a set of new knives so I was able to help them out with that.

“It was nice to be able to do that sort of thing as well as promoting local food.”
