Great British Food (Dorling Kindersley, £22) is a compilation of the very best recipes from Great British Recipes and Great British Menu Cookbook, two earlier books produced to accompany BBC 2’s television series Great British Menu. It gathers together some amazing recipes created by the chefs who entered the competition. Each recipe celebrates and reflects the range and quality of ingredients available in Britain today. Chefs contributing include John Burton Race, Gary Rhodes and Anthony Worrall Thompson. This apple crumble recipe by Michelin star chef Atul Kochna is a perfect pudding now apples are ready to harvest.

YOU WILL NEED: 2 tbsp raisins 1 tbsp apple brandy 450g apples, peeled and cut into 1cm chunks 2 tbsp toasted slivered or flaked almonds 50g dark muscovado sugar 1 tbsp plain flour Pinch of ground cinnamon Pinch of crushed black pepper For the crumble mix 300g plain flour, sifted Pinch salt 175g dark muscovado sugar 200g unsalted butter at room temperature, cubed, plus knob of butter for greasing.

METHOD: Soak the raisins in the apple brandy for 30 minutes Preheat the oven to 200ºC/400ºF or gas mark six. Butter a 23-24cm round ovenproof dish.

To make the crumble, mix the flour, salt and sugar in another large bowl, rub in the butter, adding a few cubes at a time until the mixture resembles fine crumbs.

Add the apples and toasted almonds to the raisins and sprinkle with sugar, flour, cinnamon and black pepper.

Stir well, being careful not to break up the fruit.

Spoon the fruit filling into the buttered dish and sprinkle the crumble mixture on top.

Bake for 35-40 minutes or until the crumble is browned and the filling is bubbling.

Serve hot, with thick cream, custard or vanilla ice cream.
