A Headington man will be sentenced in the new year for breaching hygiene regulations.

Saydul Islam, 45, faces 10 charges of contravening EU food safety and hygiene rules.

Between 2018 and 2019, he is said to have failed to properly clean and disinfect kitchen equipment at a restaurant in Salisbury, keep food to ensure it was fit for consumption and did not have proper pest control procedures in place to guard against rats, mice and flies.

The restaurant is not named in court papers, although the location of the offences is given as Salisbury, Wiltshire.

Islam, of Foxwell Drive, Headington, was convicted of the 10 charges in late 2019 but the sentencing has been repeatedly adjourned – most recently earlier this month.

He is currently due to be sentenced at Salisbury Magistrates’ Court on January 18 next year.

The maximum penalty for breaches of food safety law is two years’ imprisonment if the case is dealt with at the crown court. At the magistrates’ court, the sentence extends to an unlimited fine.
