A DIFFERENT take on cooking seasonal vegetables is on the menu at a popular nutritional cooking course in Oxford.
The sold-out six-week course was launched last month at North Oxford Community Centre in Diamond Place, Summertown, until October 23.
Emma Maitland-Carew takes the sessions, working with Riverford Organics to give nutritional cookery demonstrations using a seasonal vegetable box.
Emma uses the vegetables to create a range of recipes, which are then eaten by everybody for lunch, finished off with a healthy sweet treat made in advance.
She said: “I’m inspired by seasonal vegetables.
“Often when people have had them three or four times they think what can I do that’s different?”
A second six-week course starting on Tuesday, November 6 is also fully booked.
