KIM Kaewkraikhot moved to the UK in 1999 to be with her partner Martin Stead after a tough upbringing in Thailand.
Their vision was to open a Thai restaurant in the UK.
This vision started in 2004 with the opening of their first restaurant Chaophraya in Leeds. Over the past decade they have grown this into 11 restaurants all sitting under the Thai Leisure Group name.
Thaikhun started in Manchester in 2014 and this is the brand that opened in Oxford at the end of April with Cambridge following at the end of May.
GRILLED PORK SKEWERS
* 200g pork
* 1tbsp honey
* 1 tbsp coriander root
* 1 tsp sesame seeds
* Chilli sauce to dip
Begin by cutting the pork into four thick strips and leaving to one side.
Then take the honey, coriander and sesame seeds and mix to make a glaze.
Soak the pork strips in the marinade for about an hour or longer, to ensure the flavours fuse.
Then take the pork strips and skewer them one at a time.
Cook them on hot charcoals or a griddle pan until cooked through, then serve with a side of chilli sauce.
